Cinnamon Rolls! I’ve wanted to tackle this pastry for a long time. But I tend to have little patience for things with yeast that need time and babying.

This recipe comes together all at once with no need to wait and come back to it. And it’s ridiculously yummy. That’s the official classification. Ridiculously yummy. There’s a giant cinnamon-brown sugar swirl, a buttery pull apart dough, and a vanilla-spiked cream cheese glaze on top. It’s perfect.

To make;

Cinnamon Rolls
Makes 8

Dough

2 1/4 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
2 tbsp sugar
6 tbsp cold butter cut into chunks and refrigerated
3/4 cup milk
1/4 cup Greek yogurt
1 tsp vanilla

Cinnamon Filling
4 tbsp very soft butter
1/2 cup packed brown sugar
1 1/2 tbsp cinnamon
pinch of salt

Cream Cheese Glaze
2 oz cream cheese, softened
2 tbsp butter, softened
3/4 cup powdered sugar
1/2 tsp vanilla
1-2 Tbsp milk or cream
pinch of salt

I. Preheat oven to 375 degrees. Heavily butter an 8- or 9-inch round baking dish.

II. Whisk together flour, baking powder, salt, and sugar. Cut in the cold butter until the mixture contains small pea-sized pieces.

III. Whisk together the milk, yogurt, and vanilla. Gently mix the liquid mixture into the flour mixture just until a shaggy dough forms.

IV. Turn the dough onto a lightly floured surface and gently bring the dough together 2-3 times. Do not knead like bread. Roll into roughly a 10 x 14-inch rectangle.

V. Spread the softened butter over the entire piece of dough. Mix the brown sugar, cinnamon, and salt, then scatter evenly over the butter.

VI. Roll up into a log, starting at the long side. Cut into 8 rolls. I gave each end of the log a trim and discarded those pieces. Place the rolls fairly close together in the prepared dish.

VII. Bake for about 20-24 minutes, until puffed, set, and lightly golden. Avoid deep browning so the rolls stay soft. Mine took 22 minutes.

VIII. Beat the glaze ingredients until smooth. Spread over the rolls while they are still warm. Enjoy!
