Fried Corn

We’re cooking our way through the book and today we’re in our Appalachian section where Rhianna Jo’s grandmas are talking about everyone’s favorite birthday meal. Our next two recipes are Uncle Tommy’s favorites: fried corn and cherry pie.
Here’s what our very own Lissa Belcher Murray had to say about it: “Momaw always made fried corn with corn picked fresh from her garden. She usually served it with mashed potatoes, fried chicken, half runners, and sliced tomatoes from the garden. We always ate dinner at about 2 and then put the food up on her stove and went back individually later in the evening when we got hungry. There was no real supper meal. Nanny always made me a cherry pie for my birthday because I liked that better than cake. Blackberry cobbler was Mom's favorite. She really loved blackberries.”
I was also sent Nanny’s recipe for fried corn that literally just said “corn” in the ingredients and had no indication of timing or doneness. Typical!
So I experimented and came up with my own ratios to share with you. Slowly cooking the corn down in milk really gave it a nice texture that had it as creamy as if we added a bunch of cheese.
Happy summer days and don’t forget to scrape that cob!
To make;
Fried Corn
4 Servings
5-6 ears of corn, about 3 cups of kernels
1 cup milk
1 tbsp corn starch
1 tsp sugar
2 tsp butter
Salt and pepper to taste
I. Shuck the corn, making sure all the silk is removed. Slice the kernels off the cob into a large wide bowl. Scrape to the heart of the cob with the back of your knife, releasing all the bits and the corn milk.
II. Whisk the corn starch into the milk.
III. Add the corn to a skillet preheated over medium-high heat. Pour in the milk mixture. Stir in the sugar, butter, salt, and pepper.
IV. When it starts to bubble turn down the heat to medium-low and stir very often.
V. Cook until it gets thick and creamy, about 15-20 minutes.
